The Strawberry Cheese Cake recipe


Ingredients

400 g ricotta
250 g cream cheese
250 g biscuits
150 g sugar
150 g butter
3 tablespoons superfine wheat flour
50 ml liquid cream
4 eggs
400 g strawberry
1 vanilla pod
1 jar of strawberry and wild strawberry jam

Procedure
This receipe uses eggs and flour, thus it needs cooking.

Finely crumble the biscuits, melt the butter in a pan and pour it over the biscuits, then mix them together.
Cover the bottom of a springform pan with baking paper and butter the sides, then press the biscuit mixture firmly onto the base, creating a layer of about 2 cm. Put it into the refrigerator while preparing the cream.
Split the vanilla pod in two and scrape it, put the pod and the seeds in a bowl with the cream.
In a second bowl blend the cream cheese, the ricotta, the flour and the sugar, stir to obtain an homogeneous mixture.
Remove the vanilla pod from the cream and add the eggs one by one, then merge with the previously prepared cheese mixture. Pour it into the pan and bake it at 160 °C for an hour and a quarter. Let it cool at room temperature and afterwards in the refrigerator.
Cut the strawberries in small pieces and heat them in a pan with a tablespoon of sugar until caramelized, then blend the jam. Let it cool, then pour over the cake.
Let the cake rest in the refrigerator for at least 2 hours before serving.
